Pimento Cheese and Masters Takeover
Recipe from Luke...
Well I (Luke) am taking over the blog for the day so this post will be a lot more fun to read than Jamie's posts. As most of y'all don't know (since I never post), I love sports and this is probably my favorite non-football week of the year. On Monday we had the NCAA basketball season come to a close and this weekend we have the greatest golf tournament in the world, The Masters.
If you have never been to Augusta National to watch golf, then you are really missing out on a wonderful treat. Even if you don't like golf, the beauty of the course and the atmosphere is unlike any other. Also if you want to eat and drink while you're there, you can eat breakfast, lunch and dinner for less than $20 for the entire day. So since this is a food blog, I will have to tell you my favorite thing to eat there is the Pimento Cheese Sandwich which I think runs you about $1.50. Pimento Cheese is quick and easy and makes a very underrated sandwich. So here is my quick and easy version of 5 cheese pimento cheese.
1 cup of Sharp Cheddar, shredded
1 cup of Jack Cheese, shredded
1 cup of Colby Jack Cheese, shredded
1 cup of Medium Cheddar, shredded
4 oz. of Cream cheese, softened
1/2 cup of mayo
3 Tablespoons of diced pimentos
1 teaspoon of black pepper
1/2 teaspoon of paprika
Combine all of the cheeses, including the cream cheese, in a large bowl. In a small bowl, stir the mayo, pimentos, pepper and paprika together. Then pour the mayo mixture into the bowl with all of the cheese and stir all of the ingredients together and that's it.
To make a sandwich, the key is to get a old fashion white bread. This also makes for a wonderful grilled cheese.
